I'm hoping that whatever Klaus forces Stefan to reveal to Damon will shed some more light on the reasons that Stefan behaves the way he does.
There is alot more to it than this and ya'll have mostly explained everything else but I just want to add that (quick summary at the end)...
I think that some vampires become addicted to the blood and addicted to the power of being a vampire just like a person becomes addicted to drugs or alcohol. Even Elena seemed to get lost in the moment and almost seemed drugged as she went on a feeding frenzy with Damon in the frat house (as much as I loved that scene lol). However, she has taken it in moderation for the most part, even if she went wild for once, instead of just going full ripper since her first drink on the vein like Stefan did and Caroline was on the verge of doing.
Just like most addicts, Stefan does not have to like doing the drug any longer to be absolutely powerless to it. He is addicted to the blood and the power of being a vampire, pure and simple. His addiction often overpowers any goodness in him, like the goodness Julie Plec described, just like any other severe addict. Without the validation of Elena's love and , he has nothing except Caroline's encouragement to help him fight his darkness.
As for Stefan's darkness, often addictions come from pain and/or darkness already present in the individual. I would also say that both brothers have some darkness in them...Stefan often copes by indulging his addiction to blood and power while Damon copes by lashing at the ones he loves emotionally and/or creating chaos for others. They both cope with the power of love as well. However, I still believe that Stefan's darkness is ironically much more pronounced and we can see that because he STILL has yet to truly accept his new state of existence as a vampire and it is difficult for him to deal with any of his pain without turning to his darkness; we can see that this is true because going to high school while being human Elena's white knight allowed him to pretend as if he was human even more than feeding on animals did and now he has turned to his darkness again now that he feels rejected by Elena, instead of just temporarily lashing out like Damon did. Damon deals with his emotions by pretending as if he is not a good guy in his soul and reveling in his vampiric power, not surrendering to it like an addiction as Stefan does.
Stefan does not love himself and so his self worth is completely dependent upon his human illusion that was upheld by human Elena,; he is in a constant state of self-loathing and that only leads him back to his addiction. Damon gets hurt just like anyone else but he has chosen to live and embrace his new life and not allow self-loathing to control his existence, that compliments Elena's current state more and allows the fun that her true personality craves.
In Short about Stefan: Stefan's darkness is actually greater than Damon's and the depth of his darkness often leads to his mental and physical addiction to being the Ripper, just like any human addict might relate to their own addiction. The good side of Stefan is dependent upon the illusion that he is almost human because he has yet to truly deal with being a vampire and so he turns to his darkness and therefore his Ripper addiction when that illusion is compromised in any way. Until Stefan is able to truly love himself then he will always be in this state of good Stefan versus the ripper instead of learning to live life as a vampire like Damon did. Self-loathing is no longer the state that Elena is in and so they are no longer compatible in the way they once were; Elena's life "post-parental deaths experience" brings her back to her true self...without Damon in her life to remind her of her true self she may still be stuck in her loathing with Stefan.
